If you’re looking for a ridiculously easy, cheap, quick, and yummy weeknight meal – look no further. I’m bringing you a 4-ingredient, 1-dish, 5-minutes of prep comfort food meal that will please everyone in your family.
Historically, I haven’t really forayed much into slow cooker recipes. Sure, a few recipes here and there. But I really, really enjoy being in the kitchen; I love the process of creating delicious things. So for me, slow cooker recipes take a lot of the fun out of food. As such, my “Slow Cooker” Pinterest board is rather small – like, 10% the size of my “Treats, Treats, Treats!”, “Carb Heaven” or even my “Plat du Jour – Chicken & Other Entrees” boards.
However, as a working mom, and now a mom of 2, I’ve definitely developed a deep appreciation for slow cooker meals. Even during my maternity leave, with 2 kids at home I’m never really sure when the baby is going to need to nurse, or when the older one is going to throw a tantrum…so meals that can be prepared way ahead of time, in a moment of quiet way earlier in the day, has been a life-saver. I’ve learned to appreciate these convenient contraptions, because I can spend the hour leading up to dinner playing with my kids, or cuddling on the couch watching a movie, rather than stressing that dinner won’t be ready in time because the kids are being difficult. (In fact, while this was cooking last night, the kids and I took a walk down to our neighborhood lake. Another wonderful reason to do crockpot meals.)
As I prepare to go back to work in 3 weeks (whimper), I think I’ll probably start needing to do a whole lot more crockpot recipes. My latest favorite is truly a one-dish meal – something else I’ve really come to appreciate. 4 simple ingredients, dump it all in, give it a stir or two, and – voila! Scoop it out on to plates and you have supper on the table. You can even add a bag of frozen veggies to complete the meal. (Or add a side salad, like we did tonight.)
Add to it the fact that it’s full of good home-cooking comfort foods – chicken, creamy soup, and stuffing. I don’t know why stuffing is such a comfort food, maybe because it reminds me of happy holiday times, but it was excellent in this dish!
Tasty, comforting, homey…Put this in your arsenal of super easy weeknight meals. It stands on its own, or it’d be great with a loaf of crusty artisan bread – because, let’s face it, that bread isn’t much harder than this slow cooker dish. Enjoy!
Slow-Cooker Creamy Chicken and Stuffing
Ingredients
4 chicken breasts
1* box (6 oz) dry Stuffing Mix (ex. Stovetop)
1 can cream of chicken (or mushroom or celery) soup
1/2 cup sour cream
Optional: 1/4-1/2 cup water or chicken broth
Optional: 1 bag of frozen green beans (or your veggies of choice)
Directions
- Spray crockpot on bottom and sides with non-stick cooking spray.
- Place chicken in the bottom of the crockpot.
- Pour dry stuffing mix over chicken.
- Combine sour cream, condensed soup, and optional water in a bowl (use water for wetter stuffing; omit for dryer stuffing). Pour over dry stuffing.
- Cook on low for 3-4 hours. Halfway through cooking, give the stuffing a stir to distribute moisture through the dish.
- Optional: To make it a complete one-pot meal, add a bag of frozen green beans on top of the soup mixture. (If doing this, I’d skip any much or any extra water.)
*Note: I love stuffing, so I think I’ll do 2 boxes of stuffing next time! Just be sure if you do this to adjust your liquids (ie. add in more soup/sour cream, depending on how wet you like your stuffing).

Also, it doesn’t call for a slow cooker, but we just throw everything in and let it go on low for 10-12 hours (also awesome because you can start it before you go to work and leave it all day.) We just usually have toast or yummy bread with it 🙂 (Side note – don’t buy the split peas from WalMart – go Kroger, or buy them bulk. The walmart ones had SO many skins that I had to peel off, and still couldn’t get them all, so our soup was gritty :/)
